The main local tastes of Paxos include: pastitsada (braised rooster with spaghetti), burdeto (Scorpaena fish with spicy sauce), Moray Bianco, sofrito (beef casserole with vinegar, oil & wine), savor (marinated fish with raisins, garlic & rosemary), turtle doves with broad beans & artichokes, pilaf with petals and the so-called oily foods which are typically braised casserole vegetables. On 15th of August, where the feast of Virgin Mary takes place, the traditional meal consists of boiled beef with juice and lemon and is served on the nearby island of Panagia. Paxos is also famous for fresh fish, sea food, lobster, local oil, wine, oily cheese & the delicious Paxos tuna. Finally, tsiligourdopita is typically a local meat pie –a specialty with liver.
